Vegetables, along with fruits we consume like vegetables (avocados, tomatoes, eggplant, zucchini, etc.), carry a virtually impenetrable “Health Halo” and not without merit, however, the real reasons are far different and subtle than what would seem obvious. Here OFM lifts the veil of well-intended "window dressing" of the purported health benefits of vegetables by offering a much more realistic and compelling reason why they play an important role in the modern diet. . . Hint: Michael Pollan was essentially right but for all the wrong reasons!
